King crab (centolla) is fished under a regulated season—usually between July and November—and outside it what’s on offer is frozen; asking isn’t rude, it’s what locals do. Alongside it come centollón (false king crab), sea urchin, small mussels (choritos), and southern hake.
In Punta Arenas and Porvenir you eat it looking out at the sea it came from.
